How much coffee is in a bag?

We freshly roast and pack 12oz of coffee into each bag.

Is the coffee whole bean or ground?

We currently only sell whole bean coffee for optimal freshness. We recommend using a burr grinder to grind your beans right before you brew it.

What roast level is the coffee?

We roast Volcán de Fuego coffee to a medium-dark roast level between Medium and Full City, just before the Second Crack. We love this roast level because it allows the sugars to develop without burning them off, and protects the delicate flavor of our beans.

Why are some beans shiny?

Many roasters choose a dark roast to hide imperfections and flaws in their beans. This allows them to use inferior quality beans in their blends. Dark roasts burn off sugars and kill off flavor, and also release natural oils within the beans (hence the shiny appearance). We prefer a roast that is much lighter to preserve flavor nuances in the cup. Also… oils exposed to air go rancid after 48 hours leading to a bitter taste. Our coffee is never bitter, and always tastes true to the bean and the terroir it is grown in.

Do you sell decaf coffee?

No. We specialize in the highest quality specialty coffee.

Why is a pound of coffee only 12 ounces?

Coffee is a small, hard, inedible bean before it is roasted and contains approximately 12% moisture. Once roasted, this moisture, and other compounds are released or burned off, creating mini explosions within the cellular structure of the coffee bean, causing it to swell up and increase in size, much like popcorn. One pound of green coffee weighs approximately 12 ounces once roasted.

What kind of coffee am I getting?

We sell Guatemalan single estate SHB beans.

What's the best way to brew my coffee?

There is no perfect way. We prefer a pour-over brewer like a Chemex, and a bonded paper filter. View our brew guide HERE.

How many cups of coffee does each bag make?

This depends on the ratio of water to coffee you use. If you use a ratio of 14:1 (14 ounces of water per ounce of coffee) you should be able to brew 28 awesome 6 oz. cups of coffee.

What is the shelf life of my coffee?

We use one-way valves to let carbon dioxide gases released during the roasting process to escape, and block harmful air from entering the bag. We guarantee that your coffee will be fresh for 90 days if unopened and stored at room temperature in the bag. Once the package is opened, we recommend storing your coffee in an airtight container and enjoying it within one month.

Should I store my coffee in the fridge or freezer?

No. We recommend storing your beans in an airtight container at room temperature. Freezing coffee breaks down natural oils and will affect cup quality. Just minimize the mount of air the coffee is exposed to.

What about ground coffee? How should I store that?

We recommend grinding only what you will brew immediately. However, if you must store ground coffee, remember air is the enemy. Vacuum seal the ground coffee, or at least use a zipper seal bag. Do not store in the fridge or freezer.
